INSTRUCTIONS FOR THE UTILIZATION OF THE BLADE
Optimum utilization of the blade requires constant cleaning and frequent control of its sharpness. Sharpening can be performed until the blade's external diameter is reduced by approximately 12 mm compared with the nominal diameter as supplied (ref. EN 1974:1998).
The personnel in charge of these operations must be suitably trained.
It is recommended to consult the slicing machine use and maintenance manual for the operation details and safety requirements.
BLADE CLEANING
• Disconnect the slicing machine socket, close the gauge plate, remove the blade guard and the deflector, and remove and/or tilt the food carriage.
• clean both sides of the blade with a soft cloth and some methylated spirit.
• check the condition of the chromium plating, ascertaining that there are no rusty areas.
SHARPENING
• Remove all traces of grease from the blade with a soft cloth and some methylated spirit.
• Move the integrated sharpening tool to the sharpening position, or fit the separate sharpening tool supplied with the slicing machine.
• Sharpen the blade for 10" - 15".
SHARPENING WITH ONE PUSHBUTTON OR LEVER ONLY:
Check the blade for correct sharpness.
SHARPENING TOOL WITH TWO PUSHBUTTONS OR LEVERS:
After the first sharpening operation, stop the blade and use a pencil to check for any slight burring on the edge. Perform the second finishing operation for approximately 5".
WARNING:
Do not extend the finishing operation longer than the recommended time, as this may cause deformation of the blade edge.
Subsequently:
• thoroughly clean the grinders with a toothbrush and methylated spirit;
• reposition and put away the sharpening tool;
• before re-using the slicing machine, remove any sharpening residuals with a brush and soft cloth.
REPLACEMENT
• The replacement of the blade must only be performed by trained personnel, wearing suitable accident-prevention equipment and following the requirements of the slicing machine manufacturer.
• The blade is supplied already sharpened. However, resharpening is recommended during the installation, to ensure adaptation with the geometry of the slicing machine.
• The blades are made of steel, and are therefore recyclable. Before recycling remove the sharp edge.
MATERIAL
Hot rolled steel. 100cr6 quality, mat. no 1.2067, pickled, annealed with spherical cementite, and final annealing.
Tolerances according to DIN EN 10048/96.

2 Total depth of the hardened layer of approximately 10 mm;
3 Structure: 100% globular perlite.
